Ingredients
Dry Ingredients
• 125g all-purpose flour
• ½ tsp salt
• 1 tsp baking powder
• ¾ tsp baking soda
• 25g cocoa powder
• 200g sugar
Wet Ingredients
• ¼ cup vegetable oil
• 1 egg
• ½ cup buttermilk (see instruction 1)
• ½ tsp vanilla flavoring
• ½ tsp vinegar
Hot Mix
• ½ tsp instant coffee
• ½ cup hot water

Instructions
1. Prepare the buttermilk by measuring ½ cup of milk, removing ½ tablespoon, and replacing it with ½ tablespoon of vinegar. Stir and let sit for 30 minutes.
2. In a large mixing bowl, sift together the flour, salt, baking powder, baking soda, and cocoa powder. Add the sugar and whisk everything until well combined.
3. In another bowl, mix the vegetable oil, egg, prepared buttermilk, vanilla flavoring, and vinegar. Stir until smooth.
4. Pour the wet mixture into the bowl of dry ingredients and gently mix until everything is just combined. Do not overmix.
5. Dissolve the instant coffee in the hot water and pour it into the batter. Stir until the mixture is smooth and evenly blended.
6. Pour the batter into a lined cake pan and bake in a preheated oven at 160°C (320°F) for 30–40 minutes, or until a toothpick inserted in the center comes out clean.
7. Let the cake cool completely before slicing or frosting.
