Strawberry Sauce Vanilla Sponge Cake
Vanilla sponge cake layered with strawberry sauce and whipped cream. Absolutely irresistible 🤤🍓🍰
INGREDIENTS
Flour 125g
Salt 1 teaspoon
Baking Powder 1 tablespoon
Sugar 150g
Egg yolk 4 medium size
Oil 1/2 cup
Milk 1/4 cup
Vanilla flavour 1/2 tablespoon
Egg white 4 medium size
Cream of tartar 1/2 teaspoon
STRAWBERRY SAUCE
Chopped strawberries 80g
Sugar 40g
Water 1/4 cup
Vinegar or lemon juice 1 teaspoon
Corn flour 1/2 teaspoon + 1 tablespoon of water
WHIPPED CREAM
Powdered whipping cream 150g
Ice cold water 150g
CAKE INSTRUCTIONS
- Measure and mix the dry ingredients into a bowl: Flour, salt, baking powder and sugar
- Separate the egg white from yolk
- Pour in the remaining wet ingredients into the egg yolk and mix: Egg yolk, oil, flavour and milk
- Pour the wet ingredients into the dry ingredients and mix until well incorporated. Do not over mix
- Whip up the egg white and cream of tartar on high speed until it forms stiff peak.
- Fold in the egg white into the batter in 3 batches. Do not overmix
- Pour batter into an 8 inches ungreased lined baking pan
- Bake at 150 to 160 degrees Celsius or until a toothpick comes out clean
- Turn cake upside down onto a cooling rack or cake board and let it cool completely before turning upward to avoid sinking
STRAWBERRY SAUCE INSTRUCTIONS
- Rinse and Chop strawberries into little pieces then pour into a pot
- Add water, sugar and vinegar or lemon juice and bring to a boil on low heat
- Once it begins to form into thick paste, add water into the corn flour, mix then pour into the pot
- Stir the sauce until it thickens to preferred consistency
- Allow to completely cool before use
WHIPPED CREAM INSTRUCTIONS
- Pour cold water into the powdered whipping cream
- Whip on high speed for about 5 mins or until stiff peaks
- Use immediately or keep refrigerated
