Soft and Fluffy Lemon Blueberry Cupcakes (No Mixer Needed!)



If sunshine had a flavor, this would be it. These lemon blueberry cupcakes are soft, zesty and bursting with juicy berries in every bite. The best part? You don’t need a mixer. Just your hands, a bowl and a love for good homemade treats. Whether you’re baking for a crowd or treating yourself, these cupcakes are sure to impress.


Let me show you how I made them all by hand!



Ingredients

2 lemons (for zest and juice)

55g margarine or butter

1/4 cup oil

150g sugar

2 eggs

1/2 tablespoon vanilla flavor (or lemon flavor)

190g flour

1/2 tablespoon baking powder

60g blueberries (or as desired)

1/2 cup milk


Instructions

1. Zest 2 lemons. Avoid the white part (pith) to prevent bitterness.

2.  In a bowl, add the lemon zest, margarine, oil, and sugar.

3.  Cream everything together with a spoon or spatula until light and fluffy.

4.  Add the eggs one at a time, mixing well after each.

5.  Stir in the vanilla flavor.

6.  In a separate bowl, sift together flour and baking powder.

7.  Take 1 spoon of the flour mixture and toss it with the blueberries. Set aside.

8.  Add 2 tablespoons of lemon juice to the creamed mixture. 

9.  Gradually add the flour mix and milk to the creamed mixture in three batches.

10.  Mix gently until everything is well combined.

11.  Fold in the floured blueberries.

12.  Scoop batter into cupcake liners in a cupcake pan.

13.  Top each one with extra blueberries (optional).

14.  Bake at 160°C for 20 minutes or until a toothpick comes out clean.

15.  Let it cool.

16.  (Optional) Decorate with whipped cream and fresh blueberries.
